Guest guest Posted January 21, 2006 Report Share Posted January 21, 2006 @@@@@<?xml:namespace prefix = o ns = " urn:schemas-microsoft-com:office:office " /> Turkish Mucver - Zucchini Patties 2 lbs. zucchini squash (about 5 cups)grated 2 medium onions, grated 1/2 lb. feta cheese, crumbled 4 eggs 1 cup flour 2 Tbls. dill weed (or dried mint - Chupa preference) 2 tsp. salt 2 tsp. black pepper 1 cup vegetable oil Grate the zucchini into a colander, sprinkle with salt, mix and allow to sit for 15 minutes. Squeeze excess moisture from zucchini and place in a LARGE bowl. Add the grated onion, feta cheese, dill weed, black pepper, flour, and 4 eggs. Mix well until mixture becomes a thick batter. heat oil in a heavy skillet over medium heat. When hot, drop tablespoons of the mixture into the oil and fry until golden brown on both sides. Drain on paper towels. Serve at room temperature with yogurt and garlic sauce.
