Guest guest Posted January 21, 2006 Report Share Posted January 21, 2006 @@@@@ BBQ Rice and Zucchini Patties - Thai 1 1/2 cup of cooked brown rice 2 cups of grated zucchini 1 finely chopped onion small amount of chopped fresh parsley 2 beaten eggs 1 can of creamed corn 1 cup of breadcrumbs pepper and salt to taste 1 large dab of margarine/butter/oil This is so easy all you have to do is mix all the ingredients in a bowl really well and make into about a dozen small balls. Place on hot greased BBQ and squash to hamburger shapes. Brown on each side and serve These patties are lovely with a dab of chutney or sour cream.
