Simple Zucchini Latkes with Parmesan

2 small zucchini, sliced

2 egg whites, or 1 egg

salt and pepper

3 tablespoons flour

1 tablespoon grated Parmesan cheese, (optional)

Cook zucchini till tender. Cool and mash. Add remaining ingredients. Drop by

tablespoons onto hot sprayed or oiled griddle. Brown on each side.
