I can't remember if I've posted it before, and I *think* it's vegan and gluten free, somebody please correct me if I'm wrong. (I'm on this list for my dad, I'm not completely vegan and not gf, either, but he is. So I'm not always sure about my recipes, sorry!) :-/ Curried Tofu and Potato Stew 1 Tbsp vegetable oil (or a little less will work also) 1 package firm tofu, drained and cubed (smallish cubes) 1 medium onion, thinly sliced 2 cloves garlic, minced 2 tsp grated fresh ginger or ginger juice 2 tsp yellow curry powder 16 oz precooked cubed potatoes (recipe calls for packaged potatoes, I boil or steam my own) 1 can (14 oz) light coconut milk 1 cup frozen peas 1/2 tsp salt 2 Tbsp chopped fresh cilantro, optional garnish Warm oil in a large saucepan over medium-high heat. Add onion, cook 5 minutes until softened, stirring. Add garlic, ginger or ginger juice, and curry; cook 1 minute longer. Stir in cooked potatoes and coconut milk. Increase heat to high; bring to a boil. Reduce heat to medium-low. Cover pan and simmer 10 minutes. Add cubed tofu, stirring gently so as not to break the tofu too much. Simmer, covered, 5 minutes. Gently stir in frozen peas and salt; cook 3 minutes longer. Serve hot; sprinkle servings with chopped cilantro if desired. Makes 4 servings. Guest guest Posted February 1, 2006 Report Share Posted February 1, 2006 Thanks for the stew recipe.I printed it out and am carrying it in the only folder I haven't packed yet :-) My crockpot will be with us at all times and that recipe looks well suited for that.
