Guest guest Posted October 20, 2004 Report Share Posted October 20, 2004 Georgia's Apple Crisp Source: Total Health Bottom Crust: 1 cup regular rolled oats (or quinoa flakes for gf option) 2 Tbsp. pineapple juice 1/4 cup raisins 1/4 tsp. butter extract Apple Filling: 1 cup peeled, thinly sliced apples (such as Golden Delicious) 1 1/3 cups pineapple juice 1 1/2 Tbsp. cornstarch 1/2 cup raisins 1/4 cup chopped dates Topping: 2/3 cup regular rolled oats (or quinoa flakes for gf option) 1/3 cup chopped walnuts Mix bottom crust ingredients together and press into 8 " x 8 " Pam-sprayed baking pan. Steam apples and 1 cup pineapple juice together in covered saucepan for 5 minutes. Dissolve cornstarch in 1/3 cup pineapple juice. Pour into saucepan stirring constantly until mixture boils. Add raisins and dates. REduce to low heat and continue to boil 1 minute or until mixture turns clear, stirring frequently. Pour filling over bottom crust and sprinkle with 2/3 cup oats and 1/3 cup walnuts. Bake at 350 degrees for 35 - 45 minutes. " I send you love and good dishes --- from my house to yours!
