Guest guest Posted October 19, 2004 Report Share Posted October 19, 2004 Prunana Pudding Source: Total Health 7 cups water 4 cups chopped dried prunes (2 lb. package) 1 1/2 Tbsp. cornstarch 1/2 Tbsp. lemon rind 1/2 Tbsp. lemon juice 1/3 cup chopped pecans (or other nuts) 3 - 4 bananas Bring prunes and 6 3/4 cup water to a boil in saucepan. Reduce to low heat and simmer covered until prunes are very soft. Dissolve cornstarch in 1/4 cup water. Add to prunes, stirring vigorously. Return mixture to boil over medium-high heat and continue boiling 1 minute or until clear, stirring regularly. Mash prunes into small pieces with potato masher. Add lemon rind, lemon juice, and nuts. Chill. To serve: Fold in sliced bananas (or make parfaits by layering pudding with soy yogurt, sliced bananas, and granola). " I send you love and good dishes --- from my house to yours!
