Guest guest Posted May 9, 2005 Report Share Posted May 9, 2005 Fruit " Nutty " Balls Source: Tastefully Vegan 2 cups pitted dates 1 cup raisins 1 cup dried apricots 4 cups nuts (walnuts, almonds or pecans) 4 cups shredded coconut Chop or grind fruits through a food processor or a grinder. Place mixture in a bowl and set aside. Then process nuts until finely chopped. Add nuts to the dried fruit mixture. Stir in 2 cups of coconut and mix well. With hands, form 1 inch balls and roll them in remaining 2 cups of coconut. Place in an air tight container and refrigerate until ready to serve. Variation: Add 1 1/2 T. carob powder to the mixture.
