This is an adaptation of the Wacky Cake recipe that we have in our files, isn't it? My husband has a birthday coming up next month, so I am going to try this. I think the sweet rice flour makes a nice addition to this recipe. ~ LaDonna ~ >>>This recipe is an adaptation of a carob cake listed here in our recipe section. My family has renamed it " Eat-The-Whole-Cake Cake. " After one bite, you'll be tempted, too! EAT-THE-WHOLE-CAKE CAKE 3/4 cup gluten-free flour blend 3/4 cup sweet rice flour (found in Asian section at supermarket under " Mochiko " brand) 3/4 cup granulated sugar 1/2 cup cocoa powder 1/3 cup vegetable oil 3/4 tsp salt 1 TBS g/f baking powder 1 cup water 1 TBS pure vanilla extract Pre-heat oven to 350 degrees. Mix dry ingredients in large bowl. Add wet ingredients. Mix well. Pour into lightly greased 8 x 8 glass baking pan and bake until firm, approx. 30 minutes. Remove to cool on wire rack. Mine is the 15th of Oct and my younger son's is the 20th , so I'm trying to come up with some ideas for dinner/ desserts. Guest guest Posted September 28, 2005 Report Share Posted September 28, 2005 Rice Dream is not gluten free Lisa - it contains barley as part of the proprietary recipe and therefore it does not have to be included in the recipe. If you are just wheat free it's fine but if you have to avoid gluten altogether, best to try another brand of rice milk, or make your own. Just incidentally my husband's b-day is the 10th of October. I meant the Rice Dream Ice Cream (which has a gluten free list of flavors on their site).Rice Dream beverage is NOT gluten free. Yes some of their ice cream is gf and we have tried it, but my sons seem to prefer the Soy Good varieties instead - not that we have ice cream much (smile).
