Peach Cobbler

 

I made this delicious cobbler last night. If you are

using GF flour mix wihout leavening, add a 1/2

teaspoon of GF baking powder, 1/2 tsp baking soda, and

a pinch of salt to your flour mix.

 

 

1-2 Tbs GF/CF margarine

4-5 ripe peaches, peeled, pitted, sliced

1 Tbs brown sugar

1 cup GF flour mix with leavening - I like GFP Quick

Mix or Pamela's Baking Mix

1/4 cup brown sugar

1/2 cup GF rice or almond milk (I used vanilla rice

milk)

1/2 tsp GF vanilla

2 pinches cinnamon

 

Preheat oven to 350 degrees F.

 

Melt the margarine in a glass pie dish.

 

Stir the peaches with a tablespoon of brown sugar.

 

When the butter/marg is melted, swirl to coat the

bottom of the pie dish, then pour it into a mixing

bowl. Arrange the peaches in the pie dish.

 

Add the GF flour mix and brown sugar to the melted

butter and stir; add the rice milk, add vanilla and

cinnamon. Pour the batter over the peaches, leaving a

few peaches showing through here and there. Sprinkle

with a little extra brown sugar if you like.

 

Bake in a moderate oven for 25 minutes or until the

top is golden brown and peaches are soft. Allow to

cool a bit before serving.

 

Servings: 4-5
