Guest guest Posted February 15, 2005 Report Share Posted February 15, 2005 Recipe came out of necessity - adapted from the back of the quinoa flakes box 1/2 C quinoa flakes 1/4 C nut meal (I used hazelnut meal from TJs) 1/4 C rice flour 1/2 t guar gum 1 T egg replacer + 1/4 C water 2 T maple syrup 1/2 t salt 1 1/2 t baking soda 1 t cream of tartar 1 C mashed ripe banana Preheat oven to 400 degrees Mix dry ingredients together, add maple syrup, water/egg mixture, and mashed bananas. Mix well. Line loaf pan with foil and spray with oil. Pour mixture into pan. Bang a couple of times on counter to release air pockets. Bake 35 minutes or until a toothpick inserted comes out clean.
