I will post it here in original form, in healthy form for those in our house that don't eat vegan and gluten free and the vegan gluten free version. I make the latter 2 today and recieved rave reviews as well. Mica's Banana Cake (Our neighbor is in her 70's from Romania. Her mission in life is to feed and fatten up any soul that walks through her door.) -------- Vegan Gluten free version Beat in mixer : 4 bananas Add & continue to beat: 1 c. water or milk 1 c. raw sugar 1 c. oil Mix together then add to wet ingredients: 2 c. brown rice flour 1/2 c. cornstarch 2 (heaping) T. carob powder 2 T. baking powder Bake in bundt pan for 45 minutes at 325F. ----- Healthy version: 4 bananas 4 eggs 1 c. raw sugar 1 c. oil 4 T. almond milk 2 1/2 c. spelt flour 2 t. baking powder 2 t. soda 2 1/2 T. carob powder ---- Original version 4 bananas 4 eggs 1 1/2 c. brown sugar 1 c. oil 4 T. milk 2 1/2 c. flour 2 t. baking powder 2 t. soda 2 1/2 T. carob Quote Link to comment Share on other sites More sharing options...
