If you have a good look you could probably find some others. Guest guest Posted December 21, 2005 Report Share Posted December 21, 2005 1 cup crushed gf cookies (of any kind you can have) or nuts 5 T shortening or lard (I use lard) 1/2 cup sugar Put in ziploc or food processor to crush cookies. Mix in rest of ingredients. Pat into a pie shell. bake for 10 minutes I use the above for any kind of 'graham cracker' crust recipe - homemade ginger cookies went great with a ginger pumpkin cheesecake (which isn't gf or vegan, but it could have been a tofu based version and would have worked just as well). --- [This E-mail scanned for viruses by Declude Virus] Quote Link to comment Share on other sites More sharing options...

When avoiding dairy, going to margarines seldm mworks - most contain casein and the few left are seldom formulated for baking (they have air whipped in them or revert to a liquid state after heating). For non-vegans, saturated fats are better for you than hydrogenated (which is the process used for ALL liquid fats turned into solids, even if the serving size is defined as small enough that they can claim zero trans fats). Butter actually contains a decent level of good fats (compared to soy or cottonseed shortening); lard even more so (includng vit E).
