Rice noodles are fairly easy to make as they are generally only rice flour and water, but I will look for a recipe if you like. I think there is not too much nutrition in them, but for a change they are okay. I wonder if you might have access also to amaranth, or to nut flours/meals. Irish oats are much better but as I can't buy them here I don't know if all brands are OK or just McCann's. Good luck with finding oats you can use.
