I eat a lot of fresh fruit and raw veggies. I just purchased Vegan

Microwave Cookbook by Chef Nancy Berkhoff, R.D. from VRG. I hope to do a

lot more microwave cooking in these hot months.

I tend to go for a huge bowl of salad, crisp lettuce, cherry tomatoes,

scallions/spring onions, bell pepper, possibly some celery and topped with a

sliced boiled egg - if I can be bothered to boil some!

 

Evening meals tend to be quick veggie stir fry with either rice or noodles

Hi Dragon,

Yep, salads are always a good standby to make during the summer heat! Stir fry's

work too.
