Guest guest Posted September 24, 2004 Report Share Posted September 24, 2004 Vegetarian Chili 2 lbs dried black beans 15-20 garlic cloves, minced 5-10 assorted chile peppers, minced 4 onions, chopped 4 red bell peppers, chopped 4 green bell peppers, chopped 4 zuchinis, chopped 1 bunch celery, chopped 2 lbs frozen corn kernels 4 28 ounce cans tomato sauce Chili powder to taste (alot) Cook the beans in water, in a pressure cooker if you have one, until they are cooked through. Drain. Saute the garlic, chiles, onions, peppers, zuchini, and celery until brown. Cook them in batches and add to a 20 quart pot. Add the corn, tomato sauce, and beans. Season, 1/4 cup at a time, with the chili powder, until the color and taste are the way you want. Simmer for 2 hours, stirring occasionally. Makes 4 gallons. Feeds 15-20.
