Guest guest Posted May 15, 2005 Report Share Posted May 15, 2005 * Exported from MasterCook * POM Green Beans with Goat Cheese - 4 pts Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup POM Wonderful 100% Pomegranate Juice -- or juice from 1-2 large POM Wonderful Pomegranates* 1/3 cup arils from 1 large POM Wonderful Pomegranate 6 cups fresh green beans (1 1/4 pounds) -- stems removed and cut on the bias into 1-inch pieces 1 tablespoon olive oil or vegetable oil -- (1 to 2) 1 teaspoon grated lemon or orange peel 1/2 cup sliced or slivered almonds Salt and pepper to taste 4 ounces goat cheese -- sliced Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate underwater to free the arils. The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Prepare fresh pomegranate juice.* Place oil in a wok or large skillet and heat until hot. Stir-fry the beans with the lemon peel for 6 minutes. Add the almonds and stir-fry for 1-2 minutes more or until beans are crisp-tender. Remove from heat. Season to taste with salt and pepper. Toss beans with reserved pomegranate arils and juice; turn onto a serving platter. Arrange goat cheese slices over the top and serve. Makes 8 Servings Time to table: 20 minutes prep, plus 25 minutes cooking *For 1 cup of juice, cut 2 large POM Wonderful pomegranates in half and juice them with a citrus reamer or a juicer. Pour mixture through a cheesecloth-lined strainer or sieve. Set the juice aside.
