Janet and Amy,

Thanks for being interested in my recipe. I know it is a little

strange but so good! I use some applesauce so i don't have to use as

much oil, but you could interchange either if you want more, or less

oil. As for freezing, I froze a couple of batches (already cooked)

in the freezer last November in preparation for Thanksgiving. We

didn't eat it plain, so I can't tell you about that, but it worked

just fine for my cornbread stuffing. I could send that recipe in a

few weeks as well. Beware it is for large portions so you'll have to

cut it down. I may have try to cut it down myself. It takes a bit of

extra effort to make the bread, then cut it up and make the stuffing

so I make it in large batches and we eat it all week. :)I absolutely

love this time of year just for the winter squashes and cornbread!

YUM! :)

Janet, I love Bob too. And have had such success with his products

that I stick with them. I wanted some Teff flour recently and

couldn't find it in town so I ordered straight through his website.

I got a ton of stuff and spent about $160. I factored in the

shipping on the other stuff to see if it was really cheaper and I

was surprised at the things that were more expensive than my local

stores and the things that were cheaper. I got 25lbs of the GF All-

Purpose mix. Yikes! :) We'll use it though. I think I ended up

spending about a $1/lb less, even including the shipping.

LaDonna,

One of my favorite things in the world to eat is corn pudding. I

try to avoid eggs mostly but I give in for that each Thanksgiving. I

am anxious to try your Corn custard recipe. I think it will be a

great substitute for that. :) Do you think I could add some actual

corn to it?

Have a great weekend everyone!

Hugs,

Nina
