Latke and nut crust recipes, anyone?

OK, it's that time of year when I fantasize about food...

 

Well, maybe that's all year. Oops.

 

At any rate, I would looooove to have a latke (potato pancake) recipe

that's GF, soy-free and egg-free. We can use goat products, if needed.

 

Also, is anyone aware of a nut crust recipe for pies that fits the

above bill? I have fantasies of a pumpkin pie in a nut crust....ahhhh.
