Carrot Butter

1 cup carrots, chopped

1 cup water

1 teaspoon soy sauce (gf) or Bragg's Liquid Aminos

1 tablespoon almond butter

salt, to taste

 

Simmer the carrots in water until tender (about 15-20 minutes).

 

Reserve the water and throw the drained carrots into a food processor. Add

the soy sauce and almond butter. Puree.

 

Add cooking water, if needed, and continue to process until the consistency

of whipped butter.
