Guest guest Posted May 11, 2005 Report Share Posted May 11, 2005 Key Lime-Coconut Parfait Source: Barbara Kerr Cooking Class (Taste of Health) 1 cup lime juice (fresh is best) 2 tsp. coconut extract 2 (12.3 oz.) boxes More Nu Extra Firm Lite Tofu (silken) 2 (3.85 oz.) package Mori Nu Mates, vanilla, low-fat pudding mix 1/2 tsp. lime zest (optional) Blend first three ingredients until smooth and creamy. Add pudding mix and lime zest if desired. Comtinue blending until smooth. Be patient. You will need to stop your blender several times to stir down the mixture. The sugars will dissolve and it will become completely smooth. Pour into elegant parfait glasses to serve. Garnish the top with shredded, unsweetened coconut and a slice of lime for each parfait glass. Makes 4 large servings, or 8 small servings. I'm not sure of the answer, but the recipe works well by substituting the lemon for the vanilla flavored Tofu Mates. My family really loves this recipe and we've made it both ways.
