Guest guest Posted November 21, 2004 Report Share Posted November 21, 2004 Vegetable Fajitas Source: Modern Manna 1 onion cut in half, then sliced 1 green bell pepper 1 red bell pepper 1 - 2 zucchini, sliced 3/4 carrot, shredded 4 garlic cloves, minced 3 - 4 Tbs. cilantro, minced 1 - 2 cups Salsa 1 - 2 cups black bean chili 1/2 tsp. sea salt 1/4-1/2 tsp. cumin or Mexican seasoning corn tortillas Saute´ onion, peppers, and garlic 5 minutes. Add zucchini, carrots, cilantro, salsa, salt and seasoning. Cook vegetables until tender. Roll in steamed or lightly browned corn tortillas. Serve with beans and brown rice. Garnish with guacamole.
