Guest guest Posted November 22, 2004 Report Share Posted November 22, 2004 Tofu Salad Source: planet eggplant list 1 lb firm water packed Tofu, frozen, thawed, gently pressed 1 quart water 8 tsps vegetarian bouillon powder, " chicken " or vegetable 1/2 tsp celery seed 1/4 tsp poultry seasoning 1/2 tsp sugar or equivalent (or to taste) Veganaise 1/2 cup chopped celery 1/4 cup pickle relish (opt) Onion powder to taste Salt and pepper to taste Put water, bouillon, sugar, celery seed, and poultry seasoning in a small saucepan. Bring to boil. Cube Tofu and add. Turn to medium, and cook 30 minutes. Cool Tofu in broth. Drain well. (Save broth for soups and gravies.) Add remaining ingredients. Mix well. Chill and serve.
