Cranberry-Garlic Chutney

1 (1-inch) cube fresh ginger

1/2 cup apple cider vinegar

1/4 cup sugar (Florida Crystals)

3 garlic cloves, minced

1 jalapeno pepper

1 (16 oz)can jellied cranberry sauce

1/2 teaspoon salt

freshly ground pepper

Cut the ginger into paper-thin slices, then cut into very thin slivers. In

a small saucepan combine the ginger, vinegar,sugar, garlic, and jalapeno;

bring to a simmer. Cook over medium heat until there is about 1/4 cup

liquid left,excluding the solids. Stir in the cranberry sauce, salt and

pepper to taste; bring to a simmer. The sauce will be a little lumpy, but

thats fine.
