Guest guest Posted May 12, 2005 Report Share Posted May 12, 2005 Creole Mushrooms Makes 4 servings 1/4 cup apple juice or water 2 garlic cloves, minced 1 teaspoon oregano 1 onion diced 1 green bell pepper diced 1 jalapeño pepper chopped 1 tomato diced 1/2 pound mushrooms whole button 1 tablespoon tomato paste Simmer the garlic, oregano & onion in the apple juice or water for 5 minutes. Add diced bell pepper & the jalapeno pepper. Cook, stirring frequently, for 2 minutes. Add tomatoes & cook for another 5 minutes. Finally add the mushrooms & the tomato paste.
