Guest guest Posted November 22, 2004 Report Share Posted November 22, 2004 Cajun Tofu Source: plant eggplant list 1 lb firm or extra-firm waterpack Tofu, drained, frozen, and thawed Plain breadcrumbs (gluten free if necessary) Marinade (recipe follows) Mix all marinade ingredients thoroughly. Cut tofu into 1/2 " thick slices. Put slices into a ziplock bag or plastic container with lid. Pour marinade over Tofu. Marinate Tofu 1 hour or so, turning occasionally. Remove Tofu from marinade. Coat with breadcrumbs. Put Tofu on a sprayed baking sheet. Bake at 350 F for 15 minutes.. Turn, and bake 15 minutes longer, or to desired texture. (Longer cooking makes it chewier.) ---- Cajun Marinade 1/4 cup olive oil 1/2 tsp onion granules or powder 1/4 tsp garlic granules or powder 1/2 tsp dried thyme 1/8 tsp celery salt 1/4 tsp ground white pepper 1/4 tsp ground black pepper 1/4 tsp cayenne " I send you love and good dishes --- from my house to yours!
