Guest guest Posted April 26, 2005 Report Share Posted April 26, 2005 To make fruit jelly, use 1 cup of fruit juice with 1 tbsp agar flakes. Bring to the boil, simmer for another minute and then chill. Best mixed with fruit. OR as a topping for tofu cheezecake or any fruit pie. Peach Gel with Raspberry Sauce 3 1/2 cups pureed peaches, fresh or frozen 2 peaches, peeled and sliced 1/4cup agar flakes 1/2 cup water 1 tsp lemon juice 1/2 cup apple or other juice In a pie dish, arange the slices in a spiral. Put puree in a bowl. In a saucepan, Dissolve agar in water and juices, heat on high til boiling, reduce and let bubble for 1 minute. Pour into the puree, whisk together, pour into the pie dish. (if you don't want to invert the dish, arrange the spiral on top instead of under). Chill for at least three hours. Slice like a pie and serve with raspberry sauce on top or underneath. Raspberry sauce: Puree together 1 1/2 cup frozen raspberries, , 1 - 2 tbsp maple syrup or sweetener of choice. Add 4 tbsp fruit juice to achieve desired consistency.
