Guest guest Posted April 26, 2005 Report Share Posted April 26, 2005 Soy Bean Soup 1/2 lb. dried soybeans 1 small onion, sliced 1 quart water No. 2 can tomato juice 1 T. sugar (or alternative sweetner) 2 1/2 tsp. salt or to taste Wash soy beans thoroughly, put into a bowl, cover with water and let soak overnight. Drain beans and run through food chopper using coarse blade. Put into a 3-quart saucepan with the onion and 1 quart water, cover and simmer gently 1 1/2 to 2 hours or until soy beans are tender.
