Vegan-GF Cornbread 2 C Soymilk 2 EnerG Eggs 1/4 C Oil 1/4 C Natural Applesauce 1/2 TSP Apple Cider Vinegar 1 2/3 C Bob's Red Mill GF All-Purpose Flour 1 3/4 TSP Salt 1/2 Tsp Baking Soda 2 TB Baking Powder 1 1/2 C Cornmeal 3/4 C Sugar (This is a very sweet cornbread so you may want to decrease the sugar.) 1 Tsp Xanthan Gum Mix everything together, except xanthan gum. Remove any lumps then add xanthan gum and mix well. Pour in oil-sprayed 13x9 pan. Bake at 375 for 25-30 mins. Enjoy! -Nina Quote Link to comment Share on other sites More sharing options...
