Guest guest Posted April 26, 2005 Report Share Posted April 26, 2005 Spicy Cold Cucumber Yogurt Soup 2 cups cucumber-peeled, seeded and cut into small pieces 1 teaspoon canola oil juice of 2 limes 1/2 cup chopped onion 1/4 teaspoon cayenne pepper 1/2 teaspoon salt 1 tablespoon chopped fresh mint leaves 1 cup plain, soy yogurt Puree the cucumber in a blender or food processor with the canola oil, lime juice, onion, cayenne pepper and salt. Pour into a glass or bowl and blend in the mint and yogurt well. Correct seasoning if needed. Soup can be made up to 2 days in advance. Serve cold, and garnish with mint.
