Guest guest Posted April 26, 2005 Report Share Posted April 26, 2005 Hi there, I am new to this group and I am so happy to be here, I can barely believe a vegan and gluten free group exists-am I dreaming:) I have been on this trip now for 3.5 years when my eldest son was diagnosed celiac's disease, now I have a whole family that eats gluten free. When we discovered the celiac we were at a place where we were finally committing to eat a vegan diet (after years of vegetarianism) and then with great frustration we became gluten free and veganism went out the window. Over the past 3 years I have tried my best to limit the eggs, which is really what I find hard to omit from my baking, dairy-no problem. I have found that the quality of the baked goods changes drastically when eggs are omitted-at least in my experiments. With that said I hope to learn from everyone on this group and contribute a great deal. Alas, here is a thought on the honey issue. Wondering if anyone else knows of this? It has actually come to me from several people one of which is a trusted friend and nutritionist. According to ayerveda (sp?), cooking honey is carcinogenic and very toxic, not to mention difficult for our bodies to digest. This has helped me to limit the honey in my diet to only raw honey on occasion. Supposedly the procedure to collect raw hoeny is suppose to harm the bees much less than conventional collection, not sure why this is, just what I have read.
