The book " The Everything Gluten Free Cookbook " by Rick Marx and Nancy T.

Maar seems to have nothing but chestnut flour recipes.

 

Thing is, I haven't been able to find chestnut flour! :)

Instead of a recipe, why not just sub it in for a nut of bean flour in your

usual blend. It's more starchy than some nut flours but works reasonably

well.
