I just got invited to a Thanksgiving potluck, so I need dishes that will both fill me and be appetizing for people who don't normally eat vegan or gluten free food. Here are some ideas from our files (recipes are posted there). In a situation where others are neither vegan nor gluten-free, I suggest that you go 'gourmet' and don't even mention that these are 'special needs foods'. Unless you know the guests well (and they know your special needs) they probably won't even realize that these foods are 'special needs' and will just consider you quite a gourmet cook! I have to find out if creamed corn is vegan, if not then Im sure I can make my own. But I was going to take frozen mixed vegetables and some temph or any other kind of " meat " like product and heat it up with onions in a skillet. then put that in the bottom of a pan, pour over creamed corn (vegan version), then put on a layer of soy sliced cheese, particularly cheddar. then put mash potatoes on top of that, then top with some shredded soy cheese. I made this many other times before with a real meat version before I was vegan and it worked great, Im sure its easy to make it all gluten free as well. I'll let you know how it turns out.
