Guest guest Posted April 10, 2005 Report Share Posted April 10, 2005 Broccoli Peanut Stir Fry 2 tablespoons peanut oil, divided 1/4 inch slice fresh ginger, peeled 1 clove garlic 1 cup dry roasted peanuts 4 cups broccoli flowerettes 1 red bell pepper, cut into strips 1 tablespoon soy sauce (or Bragg's Liquid Aminos) Preheat a stir fry pan or wok; add 1 tablespoon oil and heat one minute. Add ginger slice and garlic clove and heat until ginger is browned. Remove garlic and ginger and discard. Add peanuts and stir fry 2-3 minutes, stirring constantly. Remove and set aside. Add remaining peanut oil to pan; heat. Add broccoli and cook, stirring constantly until crisp tender, about 3 minutes. Add pepper and cook until heated through, about 1 minute.
