Guest guest Posted April 10, 2005 Report Share Posted April 10, 2005 Lemon Pie Filling 1 cup pineapple juice 1 cup fresh orange juice 4 Tbsp. fresh lemon juice 10 dates 1/4 cup water Grated rind of 1 lemon 1/4 cup cornstarch 1/4 tsp. salt 1 Tbsp. chopped cashews Place all ingredients in a blender. Blend at high speed until smooth. Cook on low heat, stirring constantly, until mixture thickens. Let cool and pour into prepared pie crust of choice.
