Since orzo is a wheat pasta, I subbed in buckwheat groats and it was great. I used dill since my family are not big basil fans. The kids were anxious to eat it so it didn't chill properly and tasted more like warm buckwheat with herbs. The next time I will let it cool much longer. Buckwheat Salad 1 cup buckwheat groats 1 TB parsley 1 TB basil or dill 1 large tomato � chopped 1/3 cup olive oil 1/4 cup lemon juice 1/2 tsp salt Pepper to taste ------------------------------- Cook buckwheat according to packet instructions. Drain & rinse. Add parsley, basil/dill. In a cup combine oil, lemon juice, salt & pepper. Stir & pour over salad Garnish w/ tomatoes Refrigerate a minimun of and hour before serving.
