Hi Pat,

 

Thank you for this information.  I really must get over my fear of making

seitan.  However I still have the problem of exactly what sort of flour I need

to buy here in Holland where the labelling system doens't include terms such as

'strong' or x%.

 

I'll let you know when I have been brave enough to take the plunge.
