Browned Hominy Cakes - Vegan

1 can white hominy -- (15.5 oz.)

1 Tbsp. margarine

1 1/2 cups vegan powdered pancake mix -- (1 1/2 to 2)

Oil for frying

Apple butter and/or maple or fruit syrup --

optional

 

Drain the hominy, reserving the liquid. In a skillet over medium

heat, toast the hominy in the margarine. Pour into a bowl, mash with

the reserved liquid, then add enough pancake mix to form a thick

batter. Drop large spoonfuls of the batter onto an oiled griddle and

fry until browned and crispy. Serve hot with apple butter and/or

maple or fruit syrup.

 

Makes 8-12 cakes
