Chipotle Split-Pea Soup - Vegan 2 pts

2 cups split peas -- dried

8 cups boiling water

1 onion -- medium-sized, chopped

2 cloves garlic -- minced

2 carrots -- sliced diagonally

1/2 cup parsley -- chopped

1 tsp. chipotle -- finely cut, to taste

1 Tbsp. low-sodium soy sauce

 

Simmer the split peas in boiling water until soft, about 1 hour. Add

the remaining ingredients and continue cooking until the vegetables

are tender, adding more water as needed.

 

Chipotle is a smoked jalapeño that adds a smoky flavor without the

ham hock.
