Guest guest Posted February 1, 2004 Report Share Posted February 1, 2004 Chocolate Tofu Pie This is an easy pie to bake and doesn't have quite all the fat and calories of traditional recipes. 1 graham cracker crust or ready baked pie shell 1 package of Mor-Nu tofu, lite, extra firm 1/8 to 1/4 cup of unsweetened cocoa powder or carob powder (depends on your own tastes) honey (1/4 cup) or pure maple syrup 1 tsp. vanilla water Puree the tofu, cocoa powder, honey, and vanilla together in a blender. You might have to add about 2 - 3 tbsp. of water to make mixture smooth. Spoon into a baked pie shell and chill for at least two hours. First of all, I occasionally post something " by mistake " , as I do mess up now and then. But, in this case I think you are referring to the recipe for Chocolate Tofu Pie that I posted. I sometimes forget that all list members haven't been here since the beginning of our list. . .or haven't read through all the archives. Therefore, I am guilty of assuming that you know what I was thinking. The recipe calls for a graham cracker crust or ready baked pie shell. Of course the assumption is that you would make the graham cracker crust from gluten free and vegan graham crackers. They are available in health food stores or online. A ready baked pie crust is one that you prepare ahead so it's ready for the unbaked fillings. I make pie crusts with non-gluten flours or from a gluten- free mix that's available commercially. There are quite a few recipes for prepared pie crusts in our archives and I believe they are all gluten free. My favorite ready baked pie crust is made from walnuts and coconut with some almond butter for binding. It would work great with this chocolate tofu filling. I'm sorry if I confused you. . .I don't mean to lead anyone astray. Those who must eat gluten free cannot afford to deviate from the gluten free approach.
