Guest guest Posted October 4, 2005 Report Share Posted October 4, 2005 Asparagus Patties *Tried and true and delicious! 1 1/2 c. Asparagus (raw, chopped fine) 2 c. Carrots (shredded) 1/2 c. Onions 1/2 c. Cashews (ground fine) 1/2 tsp. Paprika 1/2 tsp. Thyme 1/2 tsp. Salt 1/4 c. Arrowroot Powder or Cornstarch 1/4 c. Potato Flour 1/4 c. Rice Flour 1/4 c. Water Chop and shred the vegetables (using a food processor saves time). Mix the vegetables, dry ingredients, and nuts together in a bowl. Add the water and mix well. Fry in a skillet with a small amount of olive oil. Brown on each side. Almonds or sunflower seeds can be substituted for cashews. Quote Link to comment Share on other sites More sharing options...
