Guest guest Posted February 1, 2004 Report Share Posted February 1, 2004 CURRIED LENTILS 3 cloves garlic, minced 2 medium onions, chopped 3 Tbsp. vegetable oil 1 cup dried lentils 3 cups water 2 tbsp. curry powder salt Cook garlic and onions in oil until transparent. Stir in lentils, liquid, and curry powder. Bring to a boil. Cover and cook for two minutes and turn off heat. After one hour turn heat on so mixture can simmer, covered, until lentils are soft (not mushy), about 15 minutes. Add more liquid if necessary. Serve hot or cold. Garnish with chopped raw onions and yogurt. *********************************************** IF YOU LIKE HAYSTACKS, TRY THIS: instead of chips for the bottom layer try whole wheat bread or toast (gf if necessary) withVegannaise instead of beans try the curried lentils, as per recipe above instead of lettuce try finely grated cabbage then layer with grated carrots, chopped olives, chopped pickles, alfalfa sprouts catsup and ranch dressing (or alternative) This is really good!
