Guest guest Posted April 13, 2005 Report Share Posted April 13, 2005 Unforgettable Baked Beans Source: Taste of Health Cookbook 1/8 cup light olive oil 1 3/4 chopped onion 2 medium cloves garlic, minced 1/4 teaspoon salt 1/2 cup sucanat 1/8 cup dark molasses, not blackstrap 1 cup sun-dried tomato sauce 1 can (15 oz) pineapple tidbits in natural juice, drained 2 cans (16 oz. each) pinto beans, not drained Heat oil in a 12 " skillet. Add onions, garlic, and salt. Sauté onions until dark brown. Add sucanat and molasses and stir well. Add sauce, pineapple and beans, and simmer 45 minutes uncovered on low. Not necessary to bake.
