Guest guest Posted March 22, 2009 Report Share Posted March 22, 2009 Ingredients 4 large field mushroom 500 g spinach 349 g tofu 1 tbs soy sauce DirectionsPreheat the oven to 200C, 400F, Gas Mark 6. Wipe the mushrooms, then place onto a roasting tin face side down and bake in the oven for 10 minutes. Wash the spinach well and place in a large saucepan containing a little water and allow to wilt. Pre-heat a non-stick pan and spray lightly with an oil spray. Add the tofu and brown on all sides, seasoning with salt and black pepper, then add the soy sauce and remove from the heat. Drain the spinach well. Remove the mushrooms from the oven. Turn the mushrooms over and place the spinach on top, spoon the tofu over and sprinkle with fresh herbs if wanted. Serve hot with a fresh salad.
