Tofu Baked Mushroom Recipe (serves 2 - ideal for lunch)

Ingredients

large field mushroom

 

 

500

g spinach

g tofu

tbs soy sauce

 

 

 

DirectionsPreheat the oven to 200C, 400F, Gas Mark 6.

 

Wipe the mushrooms, then place onto a roasting tin face side down and bake in

the oven for 10 minutes.

 

Wash the spinach well and place in a large saucepan containing a little water

and allow to wilt.

 

Pre-heat a non-stick pan and spray lightly with an oil spray. Add

the tofu and brown on all sides, seasoning with salt and black pepper,

then add the soy sauce and remove from the heat.

 

Drain the spinach well. Remove the mushrooms from the oven. Turn

the mushrooms over and place the spinach on top, spoon the tofu over

and sprinkle with fresh herbs if wanted.

 

Serve hot with a fresh salad.

This sounds good and simple - easy to prepare and just what many of our members

are looking for :) Good for lunch OR dinner, I'd say!
