Luau Rice

1 onion, chopped

1 clove garlic, minced

1 Tbsp. curry powder

1 1/2 cups long grain brown rice

3 1/4 cups water

2 tomatoes, chopped

1 bunch finely chopped green onions

 

In a medium saucepan, sauté the onion and garlic in 1/4 cup water for

about 5 minutes. Add curry powder, rice, and remaining water. Bring

to boil, reduce heat to low, cover and simmer for 45 minutes. Remove

from heat. Let stand for 15 minutes without stirring. Add tomatoes

and green onions, toss gently before serving. May be served hot or

cold.
