Guest guest Posted April 13, 2005 Report Share Posted April 13, 2005 Luau Rice Source: The McDougall Health-Supporting Cookbook, Vol. 2 (adapted) 1 onion, chopped 1 clove garlic, minced 1 Tbsp. curry powder 1 1/2 cups long grain brown rice 3 1/4 cups water 2 tomatoes, chopped 1 bunch finely chopped green onions In a medium saucepan, sauté the onion and garlic in 1/4 cup water for about 5 minutes. Add curry powder, rice, and remaining water. Bring to boil, reduce heat to low, cover and simmer for 45 minutes. Remove from heat. Let stand for 15 minutes without stirring.
