Guest guest Posted August 29, 2005 Report Share Posted August 29, 2005 Best Banana Cake Submitted by Mary at Veg Source Ingredients: 1-1/2 cups white rice flour (or any other non-wheat flour) 1 teaspoon salt 1-1/2 teaspoons baking powder 3/4 cup Sucanat (or less...very sweet!) 3 very large, ripe bananas, mashed 3/4 to 1 cup liquid (water, juice, cooled tea or coffee) Directions: Mix all ingredients in a large bowl by hand or with a mixer. Pour batter into greased and rice-floured 8-inch cake pans (or line pans with waxed paper). Bake at 350 degrees until firm in the center. Let cakes rest 5 to 10 minutes in the pans, then remove from pans and cool completely on cake rack. When cooled, frost with your favorite vegan frosting and impress your friends and family with this easy, super-moist and gluten-free vegan dessert! Comments from Mary: I've tried this recipe with whole wheat pastry flour, rice flours and mixtures of different gluten-free flours and the results are always delicious!
