Guest guest Posted March 15, 2005 Report Share Posted March 15, 2005 Avocado Creme Cake Source: Weimar Institute/www.3abn.org Crust: 7/8 cup dry cereal crumbs (gf if necessary) 1 - 2 Tbsp. date or maple syrup 3 Tbsp. coconut milk or Earth Balance spread Cake: 1 1/4 cups avocado 1 1/4 cups coconut milk 1/2 cup honey (or vegan alternative; agave syrup, brown rice syrup, etc.) 3 Tbsp. lime juice 1/2 Tbsp. lime zest 1 Tbsp. lecithin granules 1/2 tsp. vanilla Combine all cake ingredients in a blender. Blend until smooth. Prepare crust by combining crust ingredients and pressing into a 5 1/2? spring-form cake pan or 9-inch pie plate. Pour Avocado Creme Cake filling into prepared crust.
