Soy also has a less noticeable affect but is still of concern. A tablespoon of ground flax seed per day has the omega 3 fatty acid necessary for us to make our own GLA, especially when one eats a diet low in the omega 6 fatty acids. This is part of why I follow the low-fat dietary recommendations of Dr. John McDougall. When you have been on the gluten-free diet long enough, your intestinal villi recover and your nutrient uptake improves. Just stick with it! Thanks for sharing your happy news with us!
