I love these for lunch, but they are messy. Veggie " Reuben " 1 TBS tofu mayo (you could use low fat mayo as well) 1/2 TBS ketchup 1/2 tsp finely diced sweet pickles or 1/2 tsp sweet pickle relish 1/2 tsp garlic powder 1/4 tsp pepper 1 TBS oil 2 cups finely shredded cabbage 1/2 cup thinly sliced onions 1/2 cup sliced carrot 1/4 cup shredded potato 2 TBS lemon juice 8 bread slices 1/2 cup shredded cheese In a small bowl combine the tofu mayo, ketchup, sweet pickles, and garlic powder and pepper. Set aside. Heat the oil in a large non stick skillet over medium heat. Add cabbage, onions, carrots, potato and lemon juice. Cook stirring often for 10 minutes, or until veggies are on the tender side, (add a small amount of water if necessary to prevent the veggies from sticking). Evenly divide the cabbage mixture over 4 slices of bread, about 1 cup each slice. Top each with the shredded cheese, about 2 TBS each. On the remaining slice spread the mayo mixture and place on top of the cheese. Reheat the skillet over medium heat and cook sandwiches until golden brown, about 5 minutes.
