Guest guest Posted August 20, 2005 Report Share Posted August 20, 2005 LaVonne, Sorghum can be heavy - it's usally best mixed with other GF flours such as brown rice, and some starch, like potato or arrowroot. I'd try something like: 1 part brown rice flour 1/2 part sorghum flour 1/2 part starch Many people like bean flours in breads, too, or soy. I haven't tried those. For many recipes I use Pamela's Pancake & Baking Mix as a general all-purpose flour (it has GF baking powder in it, so I cut back on leavening in the recipe).
