My second thought would be that you might also be reacting to another food which you are using to replace the gluten (ie soy). BL Hi, I have been gluten free for approx. 6 weeks going on 7 and I got very ill the second and third week. Now this week I started to feel awful again and am wondering how normal this is or if is related at all? Guest guest Posted August 20, 2005 Report Share Posted August 20, 2005 Hi Brenda, I think your right...I was eating a organic veggie chip and it had " spices " on the label...I only had a handful and my mouth inflamed immediately so I quit eating them. Also, I had a coffee from the Holiday Station the other day, I drink decaf and never had a problem, anyhow I had two sips of it and my mouth inflamed so I'm not sure what that was about other than perhaps it was cross contaminated with their flavored coffees (?). Mostly I have been eating meats, fresh produce, dairy and rice crackers for snacks. I do suspect the veggie chips with the spices as those were something I just had recently but had not had otherwise. Also, do you think that cheeses could be suspect? I usually eat colby or cheddar but I notice that they have enzyme cultures and I think I ran across that somewhere that it could be suspect but not sure about that, do you know? The organic cottage cheese, yogurt and milk I do fine with but I have wondered about the cheese. Guest guest Posted August 20, 2005 Report Share Posted August 20, 2005 Brenda, I had the same problem when I first went gluten free. It pays to be conservative for the first six months or so. I used rice and beans as my staples and slowly added new things in. Try keeping a food journal for a while. Since intolerance reactions can take a day or more to develop it helps to have a record of what you've eaten recently. Try introducing new items one at a time to test for reactions and then wait a couple of days before adding the next one(if you have a bad reaction wait untill you recover to try something new). You can also call food producers to ask if they concider their products to be gluten free(if you have a cell phone you can do this from the grocery store). Many food manufacturers have allergy information on their websites. Stores like Wild Oats, Whole Foods, and Trader Joe's maintain GF product lists on their websites. Carry a print out of these while shopping to serve as a guide. Good luck and remember it's a not just a change in diet, it's a change in lifestyle.
